There is always a St. Patrick’s Day Party at my home every year. I just love tradition of Corn Beef and Cabbage; however, I am breaking with tradition this year and going green and healthy. I am serving Lime Cilantro Chicken. Here is my healthy recipe.
6 to 8 Boneless Skinless Chicken Breasts
Put the following ingredients in a blender or food processor:
1 whole Lime The lime has to be yellow because only yellow limes are juicy. You can find yellow limes in Farmer’s Markets and Mexican grocery stores or in my back yard. Lucky me.
½ cup Avocado Oil (Extra Virgin Cold Pressed Olive Oil OK)
1 cup White Wine (Dry Riesling goes best with Chicken)
8 to 10 Cloves of Organic Garlic
1 Large Organic Onion cut in quarters
2 Tablespoons of Cumin
2 Tablespoons of Chili Power
1 Teaspoon of Cayenne Pepper
1 Teaspoon Sea Salt
Ground Pepper
2 Bundles of Cilantro
Blend till creamy. Marinate the Chicken in the mixture in the refrigerator 12 to 36 hours.
When you are ready to bake, preheat the oven to 350o and bake in the sauce for 1 hour.
Serve is Organic Brown Rice and Asparagus or your favorite GREEN Vegetable.
